Lions Mane Mushroom Burnt Ends

Ingredients
  • 2lbs Lions Mane Mushrooms 
  • 2-2.5 cups barbeque sauce of choice 

Yields 4 Servings 

Instructions
  1. Preheat a cast iron skillet on medium heat. 
  2. Heat oven to 375 degrees and prepare a 9×13 baking tray with cooking spray.  
  3. Place mushrooms in a cast iron skillet and press down on them firmly with a smaller pan so that water is released while cooking for about 3 minutes on each side. 
  4. Once both sides are browned and most of the water is released, cut mushrooms into lengthwise strips. 
  5. Add oil to the cast iron skillet and sauté mushrooms until golden brown. 
  6. Add barbeque sauce and turn down heat to medium low. Cook for about 15 minutes. 
  7. Transfer the mushroom and barbeque mixture to the 9×13 sheet pan in an even layer.  
  8. Cook for 30 minutes. 
  9. Let cool, and top with barbeque sauce.
